The International Arbitration & Mediation Centre

Our caterers offer a range of freshly prepared food that can be tailored to dietary, health or religious requirements. These are just some example menus – contact us to discuss refreshments for your particular event.

 

Sample Cold Fork Buffet £16.00 per person Served with choice of dessert

  • Poached salmon with prawns in a sour cream
  • and cucumber dressing
  • Hand-carved ham with wholegrain mustard
  • Chargrilled chicken pieces
  • Mozzarella di buffola and roast vegetables
  • Spinach flan
  • Salad leaves, cherry tomatoes, baby cucumber
  • and yellow peppers
  • New potatoes in light mayonnaise
  • and spring onion dressing
  • Chunks of ciabatta and focaccia breads

Hot Fork Buffet selections £16.00 per person

All hot main courses are served with a selection of vegetables and dessert

  • Chicken Chasseur – A classic French dish of tender chicken white wine and mushrooms
  • Beef Bourguignon – Steak, browned and braised in red wine with carrots, mushrooms, onions and herbs
  • Moussaka – A succulent combination of aubergines, delicately spiced minced lamb and a rich cheese sauce
  • Penne Florentina – Penne pasta with mozzarella and baby spinach in a Napoli sauce
  • Sweet and Sour Pork – tender pork medallions with a tangy sauce
  • Red or Green Thai Fish Curry
  • Chicken or Mushroom Stroganoff in a sour cream sauce on egg noodles or rice
  • Cumberland Sausage and Creamed Mash in Onion Gravy
  • King Prawns in a creamy Korma sauce
  • Chicken Risotto – tender chunks of chicken in a mild pepper sauce
  • Pasta Matriciana – with bacon and onion in a rich tomato sauce

Dessert suggestions

  • Strawberry and banana fiorentina gateau with kirsch liqueur
  • Zabaglione cream with chocolate sponge, fruit and rum
  • Tangy lemon cheesecake
  • White and dark chocolate truffle
  • Fresh fruit pieces
  • Reception tartlets

Sample Finger Buffet menu £12.50 per head

  • Goujons of sole
  • Lime and chilli chicken brochettes
  • Salmon baked in filo pastry
  • Mushroom crolines baked in the oven
  • Breaded butterfly prawns
  • Crudités and dips
  • Mini open smoked salmon bagels
  • Fruit skewers and mini chocolate choux buns

Working lunch suggestions £8.50 per head

Sandwiches of selection of breads, rolls and wraps, served with fruit and juice.

  • Gammon ham salad with mustard & mayo
  • Smoked Cheddar Ploughman’s
  • Turkey, bacon and avocado
  • Smoked salmon, rocket and cherry tomato
  • Hummus and roast vegetables
  • Crab cocktail salad
  • Italian salami, swiss cheese, pesto and rocket
  • Chargrilled chicken lettuce and mayo
  • Parma ham, mozzarella and tomato
  • Egg mayo, cheese and spring onion
  • Tuna with kidney beans and onion
  • Poached salmon with dill mayo
  • Roast beef with horseradish
  • Chicken escalope, swiss cheese, lettuce and mustard mayo
  • Camembert and cucumber
  • Roasted turkey and stuffing, lettuce and cranberries
  • Sausage, tomato, mustard and lettuce

Suggested breakfast menu £6.75 per head

  • Freshly squeezed orange juice
  • Piping hot bacon and sausage rolls (including vegetarian sausages)
  • Home-baked Danish pastries and assorted croissants
  • Fresh coffee and choice of teas

Refreshments

Fresh coffee, choice of teas, biscuits and mineral water is available throughout the day at a charge of £6 per person.
